From Three Cows to Cruise Ships: A Cheese Maker’s Voyage
Mike Smales, a seasoned cheese maker, has had quite a journey from humble beginnings to global recognition. He grew up on the family farm, Little Buckholt, which was established in 1952. His father purchased the initial 50 acres near Salisbury using funds from his own father and a bank loan. Since then, the farm has expanded significantly.
Evolution of Lyburn Cheese
Located in Landford, adjacent to the New Forest, Lyburn Farm spans around 500 acres and is home to approximately 170 cows. Three decades ago, Mike recognized the need to diversify his operations. He stated, “I decided we needed to add value to our milk,” which led him to the cheese-making business.
Beginning of Cheese Production
Initially, Mike used a Portakabin to create a small cheese plant. After several years of success, he built a permanent facility around 2001. Despite the New Forest’s limited cheese-making history, Lyburn Cheese has established a robust reputation in the industry.
Achievements and Awards
- 25 Years of Operation: The cheese business has been running for 25 years.
- Youngest Cheese: Stoney Cross, an eight-week-aged cheese, won the Best Cheese in England at the World Cheese Awards last year.
Rob Macpherson, Mike’s nephew, helps manage the business. He explained that they began as vegetable and dairy farmers and ventured into cheese production. Their signature cheese resembles Gouda, and they have expanded their offerings with various flavors over the years.
Going Global
A pivotal moment six years ago transformed Lyburn Cheese’s future. Mike met a representative from Cavendish Ship Stores at the Central South Food and Drink EXPO. This company supplies food stock to major cruise lines operating from Southampton.
Over the years, they have developed a solid partnership, which now sees Lyburn Cheese supplying around four tonnes of cheese to cruise ships. Their clients include notable names like P&O Cruises, SAGA Cruises, and Carnival.
The journey from three cows at Little Buckholt to cruise ship kitchens exemplifies the innovative spirit of the Lyburn Cheese brand. With a blend of tradition and ambition, Mike and Rob continue to thrive in the competitive world of cheese making.
