Discover Unique Hand-Pulled Noodles at Union Square
On January 20, 2023, Lane Li and Chris Wang, the married couple behind Park Slope’s Noodle Lane, launched their new restaurant, Rulin. Located at 15 East 13th Street, between University Place and Fifth Avenue, Rulin specializes in hand-pulled noodles and offers innovative dishes inspired by Lanzhou, Cantonese, and Sichuan cuisines.
Rulin’s Unique Culinary Offerings
The menu at Rulin is a reflection of the duo’s multicultural experiences, moving beyond traditional immigrant recipes. With a focus on creativity, the restaurant features a variety of options:
- Starters
- Skewers, ordered by the stick
- Noodle and rice entrees
- Sides
Signature Dishes
Some of the standout items include:
- Duck Canapé ($19): A fusion of traditional Cantonese duck with house-pickled daikon and crispy roasted rice.
- Short Rib Noodles ($35): Braised beef short rib served in a chile herb sauce, topped with pickled mustard greens.
- Skewers ($5-11): Grilled skewers of chicken, squid, and shiitake mushrooms seasoned with chile flakes and cumin.
Rulin also showcases a noodle-pulling technique visible to customers through a back window, emphasizing craftsmanship and presentation.
Expertise Behind the Menu
Li’s culinary journey began when she immigrated from Guangdong at age six. She embraced Cantonese cooking in her family’s kitchen and later pursued culinary education at the French Culinary Institute. Her experiences at renowned establishments, including Guan Fu and Xi’an Famous Foods, have influenced her approach to cooking.
In 2011, she introduced Noodle Lane as a vendor at Smorgasburg, eventually transitioning to a full restaurant in Park Slope. Li now feels empowered to craft a menu that reflects her vision: “I feel more free,” she stated, emphasizing her desire to explore new culinary territories.
Atmosphere and Dining Experience
The interior design of Rulin, curated by Studio Jari, features a minimalist aesthetic with natural wood, soft marble, and curved architectural elements. Guests can enjoy the ambiance while savoring innovative dishes.
Rulin operates from Tuesday to Sunday, offering dinner service until 10 p.m. Reservations can be made through Resy, allowing diners to plan their visit to experience the unique hand-pulled noodles and other offerings.
